Baking has a long history in New Zealand, shaped by both European traditions and local innovation. Today, the industry is a significant part of the food sector, ranging from large commercial manufacturers producing bread, biscuits, and pastries at scale, to small artisan bakeries specialising in handcrafted goods.
New Zealanders have a strong preference for fresh, high-quality baked products, with bread remaining a daily staple. The industry also reflects growing trends such as gluten-free, sourdough, and plant-based options, driven by consumer demand for healthier and more diverse choices.

on the LNAAT test.

Students will learn how to follow health and safety, and food hygiene processes and
procedures related to baking industry standards.
They will also learn how to apply fundamental baking skills, incorporating literacy and
numeracy, to produce a variety of biscuit, bread, cake and pastry products contributing
to the productivity of a bakery, café or hospitality environment.
Students will learn how to apply effective communication skills to interact with internal
team members and external customers.
This course provides a pathway for further study towards higher level qualifications in baking.
A space is provided on campus where all students can complete their self-managed learning.
All learning resources are located on an online learning platform called Moodle.
We have free wi-fi on campus and Microsoft 365 and Microsoft Teams for school and home use.
Our learning space includes a fully equipped kitchen, food safety gear and washroom faciliities.
You will be able to ask your lecturers any questions about your assessment and learning.
We also have a dedicated Student Services Team who can help you with any academic or personal issues you face during your time with us.

What is the application process?

What if I miss some classes?
You will have access to all the learning material on our learning management system, Moodle, however we strongly encourage you to attend most of your classes. Every session is essential to your learning and attendance is important.
